Place the white candy melts and peppermint extract in a microwave-safe bowl.
Microwave in 30 second increments, just until the chocolate is almost melted. Stir to combine.
Place the green candy melts in a separate bowl. Microwave in 30 second increments, until melted. Stir. Place the green candy melts in a piping bag or ziploc bag with the tip cut off.
Place a piece of parchment paper on a baking sheet.
Pour the white chocolate out onto the prepared baking sheet and spread with a spatula until it's a rectangle that is 1/4-inch thick.
Place the pretzel sticks all over the white chocolate, with spaces in between.
Use the green candy melts to pipe trees over each of the pretzels, leaving a little trunk at the bottom of each.
Sprinkle the trees with the rainbow nonpareil sprinkles. Top each tree with a star sprinkle.
Sprinkle the white chocolate areas with the crushed candy canes.
Let the chocolate bark harden at room temperature for a few hours. You can also place the baking sheet in the refrigerator to harden for about 30 minutes if you prefer.
Slice or break into pieces before serving.
