Christmas fruitcake cookies

These fruitcake cookies are packed with all the flavors of traditional fruitcake, but in a fun and easy-to-eat cookie form. Dried pineapples, raisins, candied cherries, and pecans are folded into cookie dough for a delicious dessert that has fruitcake taste in every bite.

Mix the dry ingredients together in a medium bowl. Set aside.

Add the granulated sugar and butter together in a large bowl. Cream together for 2-3 minutes, until light and fluffy.

Add the eggs, vanilla extract and almond extract.

Mix until combined.

Add the dry ingredients to the wet ingredients.

Stir until combined, until no more streaks of flour remain. Do not over mix.

Add the dried pineapple, candied cherries, and raisins to a bowl with the remaining 2 tablespoons of all-purpose flour.

Toss until the dried fruit is completely covered with flour.

Add the dried fruit and the chopped pecans to the batter.

Stir until evenly distributed.

Place the cookie dough in tablespoon sized balls onto the baking sheet, leaving a few inches between each ball of dough.
